Eating In // Black Eyed Pea and Arugula Salad with Honey Vinaigrette

My go to meal is a nice salad filled with nutrient dense food. Legumes, eggs, and arugula. I get so excited when arugula comes back in season because it is my absolute favorite. If you have beans and eggs already cooked and in the fridge, the salad basically makes itself. I like to also keep a jar of homemade dressing on hand. Let's face it, store bought dressing just doesn't cut it.

Ingredients:

Serves 6

For the salad:

  • 4 cups fresh arugula 
  • 6 eggs ( or one for each person)
  • 1 english cucumber 
  • 1 cup cooked black eyed peas

For the dressing: 

  • 1/4 cup mayonnaise 
  • 2 tbls honey 
  • 2 tbls grainy mustard 
  • 1/8 cup flax oil or olive oil 
  • 1/4 cup apple cider vinegar
  • 1 clove garlic 
  • salt and pepper to taste

Directions: 

1. Toss all of your veggies and legumes well in a large bowl with the arugula.

2. For the dressing, add all of the ingredients to a jar and shake, shake, shake until very well.

3. Toss dressing with salad and serve right away.
