Eating In // Lunch in a Jar

We all know that it's a good idea to pack a lunch for work. Not only is it economical, but it can be and usually is far healthier than other quick lunch options. The only problem is that for success, it takes a bit of planning. For me, the easiest thing to do is to pack a little salad in a jar the night before. Generally, I go for a grain, protein, veggie mix. The options are basically endless because you can use whatever mix of food groups you love the most.

Ingredients:

  • 2 radishes, sliced
  • 1 or 2 boiled eggs
  • 5 cherry tomatoes, sliced 
  • 1 cup spinach 
  • 1 serving bulgar 
  • 1 tbls olive oil 
  • 1 tsp balsamic vinegar 
  • salt and pepper

1. Cook the bulgar according to the package instructions; boil the eggs. Allow both to cool.

2. Begin with bulgar as the first layer in the jar, and the add the oil and vinegar, from there add the tomatoes, radishes and top with the spinach and the egg.

3. Always put the dressing at the bottom with the grains so it doesn't wilt the spinach. Store in the fridge until you're ready to eat it.
