Eating In // Orange- Walnut Flourless Spice Cake

This cake is spicy, sweet, and well worth the effort. Citrus is in season so you may as well take advantage of it. Bake it today and surprise someone. Happy baking!

Ingredients: 

  • 2 cups walnut flour 
  • 2 cups sugar + 1/2 cup (for oranges) 
  • 7 eggs 
  • 1/2 cup melted butter
  • 3 oranges 
  • 2 tsp baking powder
  • 1 tsp ground cinnamon 
  • 1 tsp vanilla extract
  • 1 tbsp honey 

For the glaze: 

  • 1 cup confectioner sugar
  • 3 tbsp or so heavy cream 

Directions: 

1. Preheat oven to 350 degrees. Start with the oranges,  cut them into pieces and toss them into a medium saucepan. Add 1/2 cup of sugar and a 1/2 cup of water and simmer, covered for 30 minutes. When the oranges are done, blitz them in a food processor until they are a rough paste; set aside. 

2. Using the food processor again, add 2 cups of walnuts and grind them until they are a fine meal. Don't grind them for too long or you'll end up with walnut butter :) 

3. Set the walnut flour in a small bowl and whisk it with the cinnamon and baking powder. 

4. Now, again, using the food processor, beat together the eggs, sugar, honey, butter, and vanilla until a nice cake batter is made. Gently and slowly add the walnut flour mixture. 

5. Pour the batter into two floured and buttered 9" cake pans. Bake for 25-30 minutes until set and golden. Whisk together the confectioner sugar and cream for a nice glaze to pour over the top.
