Eating In // Swedish Chocolate Cake with Ganache

This cake is small but it is mighty. If you love dark chocolate then you will love this. Also if you're nervous about baking cakes, this is a good one to try.  It's difficult to mess up. You could just sprinkle the cake with powdered sugar, which I think is what's traditionally done, or you could slap on some ganache like I did :) 

Ingredients:

Serves 12 or so 

For the cake: 

10 tbsp salted butter

1/2 cup cocoa powder

1 3/4 cup  sugar  

1 cup  flour

3 eggs

1 tsp vanilla extract 

For the ganache: 

6 oz dark chocolate (bars, chips, etc)

3/4 cup heavy cream 

Directions: 

1. Preheat oven to 350 and grease a 8"-9" cake pan. Gently melt the butter in a medium saucepan and stir all the rest of the ingredients. 

2. Pour the batter into your prepared cake pan and bake for 20-30 minutes. 

3. Take your heavy cream and warm it to a bare simmer. Once you see the first bubble, remove for heat and add the chocolate. Gently stir until all the chocolate has melted. Spread into the cake.
