Eating In // Tabbouleh + Pita Bread

I like this salad because it tastes really good, you can make it ahead of time, and it looks like you really tried. It's super easy to make. Especially if you get the 10 minute Bulghur Wheat from Trader Joe's and use a food processor to do the bulk of the chopping.

The Goods:

(Serves 8)

1 cup Bulghur Wheat

1/4 cup freshly squeezed lemon juice

1/4 cup olive oil

3 1/2 teaspoons kosher salt

1/2 cup minced shallots

2 garlic cloves

1 cup chopped fresh mint leaves (1 bunch)

1 cup chopped flat-leaf parsley (1 bunch)

1 cucumber, diced

2 cups cherry tomatoes, diced

Directions:

1. Cool the Bulghur according to the directions on the package. Like I mentioned before, if you get the 10 minute one it makes the prep super fast. Once it's cooked, drain it and allow it to cool.

2. The trick to using the food processor is to chop everything in stages so it doesn't turn to mush. That being said, I started with the herbs, shallots and garlic and minced them well. I then added them to the Bulghur.

3. Next, chop the cucumber and tomatoes and add to the Bulghur mixture. Stir in the olive oil, salt and lemon juice. Allow to chill a bit before serving. Serve with pita bread or just eat it right out of the bowl. :)
