Eating In // Watermelon Salad

This is a really refreshing recipe for the spring and summer months that can be eaten as a pool side snack or  served as a side dish for any meal. Enjoy!

The Goods (Serves 8):

  • 1/2 watermelon, diced
  • 1 small sweet onion sliced
  • 1/2 cup chopped cilantro
  • Juice of 3 limes
  • 3 tbls apple cider vinegar
  • 3 tbls olive oil
  • 1 tsp sugar
  • 2 tsp minced ginger root
  • 1/2 crumbled feta
  • Salt and pepper

Directions:

  1. Slice and dice all of the ingredients and throw into a bowl with the vinegar, lime juice, oil, ginger, salt and pepper, feta and gently mix together.
  2. Chill for an hour or overnight before serving.
