Honey Marshmallows

Spring is finally almost upon us and no better way to celebrate the nice weather than an evening fire out back. If you're entertaining, these honey marshmallows are such a hit. Give them a try and let us know how they work out for you!

The goods:
4 envelopes of unflavored gelatin
3 cups of granulated sugar
1 1/4 cups honey
1/4 tsp salt
2 tsp vanilla extract
1 1/2 cup confectioner sugar

Directions:

  1. In a heavy bottomed saucepan combine the sugar, honey and 3/4 cup of water. Heat over medium until it comes to a boil. Boil it until it reaches 238 degrees on a candy thermometer.
  2. In the bowl of a mixer, dissolve the gelatin for 5 minutes.
  3. When the mixture has reached 238 degrees, slowly stream into the gelatin while the  mixer is on low speed. Mix in the salt and vanilla. Gradually bring the mixer up to a high speed.
  4. Whip it on high until stiff, fluffy and white. It took me about 12 minutes.
  5. Pour the fluff into a greased baking dish and allow it to set for 3 hours.
  6. Once it's set, flip the entire marshmallow onto a counter that has the confectioner sugar on it. Take a knife and slice the mallows into cubes. You will need lots of powdered sugar to make sure all the sides of the cubes are well coated.
