Eating In // Pecan-Date Muffins

Snow days are the perfect time to catch up on work, rest, and more importantly, bake. I love to bake for my family when we are stuck together in the same house. Here is a muffin recipe for you try tomorrow morning, just in case you won't be able to make it out of the house. 

The Goods:

yields 12 muffins

  • 2 cups all purpose flour 
  • 1 tbls baking powder 
  • 1/2 tsp salt 
  • 1 cup whole milk 
  • 1 cup chopped dates 
  • 1/2 cup chopped pecans 
  • 1 tsp orange zest
  • 1 egg, beaten 
  • 5 tbls melted coconut oil 
  • 2/3 cup sugar 
  • 1 tsp vanilla extract 

Directions: 

  1. Preheat the oven to 400 degrees. In a large mixing bowl, beat the egg with the milk, sugar, and the vanilla extract. 
  2. In a separate bowl, whisk the flour, baking powder, and salt then add it to the bowl with the wet ingredients. 
  3. Gently fold in the pecans, dates, and the melted coconut oil until just mixed. Divide the batter into a muffin pan and bake for 15-20 minutes. Enjoy!
