Eating In // Asparagus and Egg Tartine

This recipe is easy to assemble, very tasty, and an excellent way to start the day.

The Goods:

Serves 4-6

  • 1 bunch asparagus, blanched, halved
  • eggs 
  • 1/4 lb sliced prosciutto or ham if you prefer
  • parmesan cheese 
  • fresh rustic bread such as a french loaf or sourdough
  1. Start by blanching the asparagus: Get a pot of boiling water and dunk the asparagus into the water for a quick 30 seconds. Have an ice bath ready so that when 30 seconds is up, you can plunge the asparagus into it to stop the cooking. 
  2. Layer a slice of prosciutto and then some asparagus onto a slice of bread. Gently cook the egg without breaking the yolk. Once the egg is cooked enough to hold its shape, place it onto your already prepared asparagus and ham.
  3. Shave the parmesan on top and then broil for 30-45 seconds. Season with salt and pepper and serve. 

*tip: Buy the prosciutto from the deli counter. It will be half the price of the prepackaged stuff.
