New Year's Treat: Butternut Squash Tart

Easy, delicious, and a crowd pleaser. Try it for your New Years party. 

The Goods:

Serves 10-12

  • 1 sheet of frozen puff pastry, thawed
  • 1 butternut squash
  • 2 tsp. of fresh sage, chopped
  • 1/4 cup shredded parmesan cheese
  • 1 tbls. olive oil 
  • 2 tbls. honey 
  • salt and pepper

1.Preheat oven to 375 degrees. Start by peeling the squash and then cut it into thin slices. You can cut it in half lengthwise first and lay the flat side down on the cutting board and slice from there.

2. Roll the puff pastry out onto a floured surface. Gently transfer it to a parchment-lined baking sheet.

3. Neatly shingle the squash onto the dough leaving about a 1/2 inch of room around the sides. Put another piece of parchment paper on top and then put another baking sheet on top of the tart.

4. Bake in the oven for 10 minutes. When the 10 minutes are up, the dough should be just starting to brown and the squash should be tender. Remove it from the oven, brush it with olive oil and sprinkle the cheese and salt and pepper on top.

5. Return it to the oven and bake for another 20 minutes until it is golden brown. Once removed, drizzle the honey and sprinkle the sage over the top.

Let the tart cool and cut it into squares. Serve at room temperature.
