Eating In // Kale Salad with Mango & Pomegranate


I got this recipe from my cousin Ashlee Brown. 
It is very fresh, healthy, delicious and was a big hit at our recent dinner party. 

The Goods:
1 lb kale (we used kale grown by my mom and grandma)
1 ripe mango, diced
1 small red onion, sliced thinly
1/2 pomegranate seeds
Juice of 1 grapefruit
Juice of 2 lemons
2 garlic cloves
1 tbls honey
3 tbls apple cider vinegar
Salt and pepper
3 tbls of extra virgin olive oil

Directions:
Toss all of the ingredients into a large bowl and allow to marinate for an hour or so. Serve chilled.
