Eating In // A Summer Dinner

So, we threw an impromptu summer dinner party the other night. My friend had just given me some fresh peaches and basil from her home garden, so it got me thinking. We ate the peaches, among other things. All of the food was chilled and fresh and probably took a total of thirty minutes to prepare. Peach slices and watermelon with basil syrup on top were on the menu. The main dish was marinated tuna with olives served with baguette (which everyone thought would be gross but was awesome - recipe here). And lastly, fried halloumi, which was a total hit. We served everything alongside rosé which is really nice summer wine. We literally put some plates and glasses in a basket and headed outside. The weather was so nice and we had these lovely trees to just hang out under. Isn't this what summer is all about? 

Recipe for the Peaches and Basil: 
  • 10 leaves of fresh Basil 
  • 1 lime, sliced in half
  • 1.5 cups sugar 
  • 1 cup of water 
  • 4-5 peaches, sliced 
  1. Pour the sugar, water in a saucepan and then squeeze the lime in and then toss the whole thing in. Tear the basil leaves and throw them in with the sugar. 
  2. Bring to a boil and then turn it off and allow to steep for about 10 minutes. 
  3. Slice the peaches and arrange on a plate and then pour the syrup over the top. Enjoy! 
Note: we also poured this same syrup over watermelon chunks-- so delicious.
